Batter for Frying Onion Rings – from Cheryl
1/2 c Atkins bake mix OR 3/4 cup of soy flour
1/3 c oil or melted butter
2 eggs
1 c water
1 tsp. salt
Blend the bake mix OR flour, salt and eggs in a bowl until it forms
a pasty, crumbly mixture, then slowly add a combined mixture of the oil
OR butter and the water. Blend thoroughly until batter is smooth-NO
LUMPS. You can adjust the thickness to suit your recipe. For
a thicker batter, add more flour: for a thinner batter, add more water.
