Fanny's Quick and Easy, No-bake, Two-layer Pumpkin Pie
First, you'd just do a crust like the one you do for your cheesecake (1c finely chopped nuts, 5T butter, 1 egg yolk, AS). Then:
Bottom Layer:
A can of pumpkin
A box of sugar-free vanilla pudding
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
Topping:
8 oz cream cheese
1 cup heavy cream whipped
1/2 tsp vanilla extract
AS to taste
Mix bottom layer ingredients together and pour over crust.
Cream cream cheese and fold together with whipped cream, AS and vanilla.
Pour on top of bottom layer. Let set in refrigerator for a few hours.
