Low-Carbohydrate Cheese Sauce – from Marion

1/4 cup sour cream (or cream cheese)
1/4 cup grated sharp cheddar
1/4 cup of heavy cream (or to your preferred consistency)

Stir cheese into sour cream.  Microwave for 45-60 seconds (depends on your machine).  Remove, stir while piping hot.  Add cream, stir.  Add any spices you want:  i like fresh cracked black pepper, oregano, and basil.

And if the cheddar wasn't sharp enough for me to taste, I'll add some Parmesan.

Serve over cooked cauliflower or broccoli.
