Dad’s Sausage

2 lbs. ground pork
½ tsp. ginger
½ tsp. nutmeg
½ tsp. coriander
1 tsp. sage
½ tsp. thyme
½ tsp. pepper
1½ tsp. salt (or Morton Lite)
5 – 10 drops hot pepper sauce, to taste

Mix all together, add a little water if necessary. Fry in patties, or loose. Gets more flavourful as it sits.
