Southwestern Eggs – from Sharon P
Melt 1 tbsp. butter in non-stick skillet and sauté:
1 oz. diced tomatoes
1 oz. chopped mushroom
1 oz. chopped spinach
Add 3 eggs and scramble until the eggs are cooked. Add a spoonful of
cream cheese or sour cream and heat, while stirring, until warm (also makes
a good omelette). Put on plate and cover with 1/4 cup salsa. Enjoy!
