Quick and Easy Low Carb bread – from Debbie Cusick
1/4 cup flaxmeal
2 tbsp. pecan meal (or other nut meal)
1/2 cup protein powder, plain or vanilla
2 large eggs
1/2 tsp. salt
1 tsp. baking powder
1/2 cup heavy cream
1/4 cup seltzer water
Preheat oven to 350 degrees F. Generously butter a standard loaf pan.
Beat all ingredients for 1-2 minutes using a food processor or electric
mixer. Pour into pan and bake 25-30 minutes until middle of loaf
springs back to the touch. Enjoy.
