Chocolate Muffins
1 cup Chocolate flavour Soy Protein Isolate
1/3 cup Cocoa
1 tsp. baking powder
3 pkg. Sweet-N-Low
2 eggs
1 1/2 tsp. vanilla
1 1/2 tsp. butter extract
1/2 cup coconut milk
1 1/2 cup seltzer water
4 Tbsp. oil
Stir together dry ingredients. Mix together wet ingredients and pour
in to dry ingredients and mix well. Spray coat 18 muffin cups and fill.
Bake 15 min. @ 375.
